Pressable arrived in React Native 0.63 36,878 in July 2020, because the Touchables' fixed effects matched no platform's own interaction and had no room for hover, focus, desktop or TV. The Touchables are still not deprecated, but each doc page points to Pressable as "a more extensive and future-proof way to handle touch-based input".

Use Pressable in new code; there is no rush to rewrite working Touchables. A migrated TouchableOpacity becomes a Pressable with opacity: pressed ? 0.2 : 1, losing only the short animated fade.
